Some useful tips when consuming garlic

You can chew parsley after garlic to prevent the dreaded ‘foul breath’ or suck a peppermint, to prevent bad breath. Also rubbing a crushed clove around your salad bowl to add that extra flavour without overpowering your meal.

Raw Garlic’s potency can vary by as much as 13 fold so pick a strong well-cultivated garlic. Work recently conducted by The Garlic Centre on behalf of the BBC (British Broadcasting Corporation) has shown a wide variation in types of garlic and their ability to produce allicin.

Taking garlic tablets with a fatty meal will help your body absorb much less fat from the meal. Your body will get much more benefit if you can eat garlic that has been cut into slices as crushing will destroy much of the active allicin.

Reject any bulbs that have started to dry out as they will have lost their flavour. Don’t burn your garlic as it will smell awful - it singes much more quickly than onions do. Boiling garlic almost completely removes the odour.

Dehydrated garlic is virtually odourless but when water is added the flavour returns almost completely.
